The processing of GABA tea was developed in Japan in 1987. Researchers discovered that by fermenting tea in a Nitrogen-rich environment, the tea would develop higher than usual concentrations of GABA, anti-oxidants, flavanoids, catechins and polyphenols. Today GABA tea is a staple in Japan. The Japanese recommend GABA tea to their population as a natural approach to fighting the diseases that arise from aging. Many students also drink GABA tea before their exams to reduce anxiety and increase their ability to focus.
Our GABA oolong is instantly recognizable by its singular aroma and taste. The fragrance is herbal with the starchy sweetness of banana chips. Malt dominates the tasting notes, with a textured liquor. Re-steep potential is high, with cups beyond the fourth becoming simpler, sweet and smooth.
Steeping Instructions:
Prepare 3 grams of tea leaf (slightly less than a teaspoon) per 100ml of water(about half a cup).
For the first two steeps, 93°c water for no longer than 60 seconds will provide plenty of flavor. From the third steep onward it is fine to add up to thirty additional seconds per steep. This should provide between four and six re-steeps depending on the quality of the tea. For larger vessels (teapots of over 500ml) re-steep potential is usually lower.
