There is a certain mystique surrounding matcha among Western tea drinkers, what is it? Matcha is a powdered green tea which originated in Japan. To be considered true matcha, it must be made using Gyokuro style leaf, and all stems must be removed prior to milling. Matcha has higher concentrations of anti-oxidants over other types of tea as well as a higher concentration of caffeine. Our matcha has no flavoring or sweetener added.
This tea is meant to be prepared usucha style, thin liquor. We suggest between two and two and a half grams of powder with 100ml of water at 70 to 75°c. Whisk vigorously with a bamboo whisk (chasen) in a zigzag pattern until texture is smooth and a foamy head has been achieved. An oversized bowl is recommended to avoid spillages. Enjoy immediately.
The fragrance recalls fresh cucumber and melon, and we detected notes of bamboo, edamame, and nori in the palate. The overall flavor is at once sweet and savory, with a bare hint of astringency.
